Crockpot Chicken Burritos
I came up with this yummy recipe when I was craving chicken burritos one day. It is seriously so simple and so delicious. It just gets better and better each time. The best part of this meal is that you can change it up by putting whatever you want in the inside of your burrito, that is you want to have salsa in there or some sour cream or maybe some homemade guacamole even. It is entirely up to you! I made it last night for dinner and my husband rated it a 10! That speaks volumes because he rarely rates anything a 10, because there's "always room for improvement". So I was elated when he said it was a 10. Here's the delicious recipe!
Crockpot Chicken Burritos
6 boneless skinless chicken breasts
15 1/4 oz. can corn, drained
16 oz. can black beans, drained and rinsed
16 oz. jar salsa
6 to 8 10-inch flour tortillas
Garnish: shredded cheddar cheese, sour cream, salsa, guacamole
Place chicken in a slow cooker; top with the corn, black beans, and salsa. Cover and cook on low setting for 8 to 10 hours, or on high setting for 4 to 6 hours. Shred the chicken, stir back into the slow cooker. To serve this, spoon mixture onto the tortillas. Add your desired garnishes and roll up.
Serves 6 to 8.
Note: I think the next time I make this, I will add a packet of fajita seasonings. It might add a bit more flavor to the burritos. And I think I'll use mango peach salsa instead of regular salsa.
