Hamburger Soup
The past few nights it has been a bit chilly here so I decided I wanted to make some soup for dinner last night. This is a recipe that I created myself. My husband thought it was a little bland, but that's because I purposely avoided any spices but I suppose next time I make it, I will add the spices he wants in it.
This soup is pretty hearty and filling. It is a nice thing to eat while watching television or at the kitchen table. I probably won't make this meal for my kids until they are a little bit older so they can enjoy it then. Right now, my daughter is a somewhat picky eater but she will eat anything once as long as she sees me eat it. But she won't take more bites after the one. Anyway, here is the recipe for the Hamburger Soup. I hope you enjoy!
Hamburger Soup
1 lb. ground beef (I used ground turkey)
6 cups water
2 cups tomato juice
1/2 cup shredded carrots
2 cups diced potatoes
1/2 cup chopped celery
4 tbs. uncooked rice
2 medium onions, chopped
2 tsp. salt
Brown the beef in a skillet, chopping into bite size pieces as it browns. Drain. Add six cups of boiling water in the saucepan. Add the remaining ingredients and simmer for approximately thirty minutes or until the vegetables are tender. (Note: I let it simmer for about an hour because my husband likes the vegetables to be very tender.)
