Long delay

Sorry for the lengthy absence of my almost daily blogging.  I just got so busy with things that have been going on.  Not to mention, my son is now climbing on everything!  It is a little overwhelming to make sure he doesn't fall and hurt himself.

But the good news is my daughter is finally done with the school year.  I can't believe how fast the school year went for her!  I registered her for next year yesterday after her four year check up with her doctor.  I still can't believe she's in school.

My husband and I have been doing a lot of grilling lately.  I think it's pretty fun because I don't have to use the oven since it's getting pretty warm here.  Not to mention, a little less cooking for me which is always a nice thing.

I haven't made a card in ages.  But I did make two thank you boxes with six thank you cards and six matching envelopes.  I made those for my daughter's teachers for their end of the school year gifts.  I was seriously not sure what to get them or make them.  But in the end, I decided to make them a set of thank you cards they can send out to people or to keep.  Not sure what I'll do next year.  But once my son is in school, I'll have to make some for his teachers as well.

Well, it's almost nap time in my household for the kids.  So I think I'll end this here and hope I can make it a more consistent basis to write in here.  I can't promise anything because I usually blog when my daughter is in school and my son is playing with his toys.  But now that he is climbing on things, it is a little tougher.

Happy birthday!

I honestly can't believe how fast the time is going!  Today is my son's birthday.  He turns two today!  It seems like yesterday that my husband and I went to the hospital to give birth to him and now here he is, two years old!

Two years ago, we had my mother come over to the house to watch our daughter while we were in the hospital.  Our son's birth was a scheduled c-section.  We planned the day he was born because our daughter was going to be home with my mother and we didn't want to be away from her for that long.  It seems like yesterday that my husband and I were laying in bed all giddy with excitement knowing our son was going to be here soon.  We had to be at the hospital at 5am, but stayed up until 2am!

Tomorrow my son has a doctor's appointment after I drop my daughter off at school.  And on Thursday there is an event going on at my husband's work that we are going to after the kids wake up from their nap.  What a busy week!

She put a spell on me

I swear, I think she put a spell on me.  My daughter has this crazy ability to make me cry or make me all mushy gushy.  I think it's because she's my first child and she is my rainbow baby.  But she does this to me.  Every single day.

Next week my son has a doctor's appointment.  He's getting his two year shots and wellness check up.  I am a little sad because he will be two soon.  Time flies by for sure.  I hope he doesn't cry during his shots, but I'm sure he will.  My daughter will be getting her shots for her four year shots and wellness check up as well.  But after she gets her shots, I'm going to take her to get some ice cream to make it all better for her.

I remember when I was a kid, time seemed to go slow.  But now as an adult, time flies by.  I am sad that it goes by so fast. 

Last night for dinner we had burgers and I made some potatoes thing.  I peeled them, cut them kinda small like, and put them in a foil.  I added some thinly sliced onions, olive oil, salt, and pepper.  It turned out really good.  My husband even said it's a keeper of a recipe.

I'm going to be an aunt!

I am a bit sad and happy about the news of becoming an aunt.  Wait, what?  I am going to be an aunt, again?  Does this mean that someone in my family is pregnant?  Yes, it does.  I am happy because it means that I get to be an aunt.

However, I am a bit sad as well.  Why sad?  It is because my little sister is the one who is pregnant and not my sister-in-law.  If anyone knows me, they know that my sister and I are not close.  We are not even remotely close at all.  I don't know much about my sister as sad as that sounds.  I don't know much about her, other than she lives in California, she's married, and when her birthday is.  That's as far as it goes as knowing anything about her.

I feel a little sad that her child, my nephew or niece, will never really get to know me.  They will never really get to know their aunt.  Instead this child will grow up with my sister's friends and her husband's friends as their alternative uncles and aunts.  My kids will never get to really spend time with their cousin.  

My husband always tells me that at least I have his sister and brother as my own.  But it's not the same when they didn't grow up with me.  But I am grateful, forever grateful, I have them as a sibling.

I wish the best for my sister as she enters this new adventure of motherhood.  It's exhausting but it's an amazing experience as well.

Wacky Weekend

What a crazy weekend I had!  

On Saturday we were supposed to get rain.  We also wanted to go to Petapalooza with the kids.  We waited until they woke up from their nap to take them and to see how the weather would hold out.  Well, once they woke up, we got them ready to go.

People just don't know how to drive in the rain.  With that being said, it wasn't really raining by our house when we left, but when we started driving further on it started raining.  At one point, we were stopped at a red light and the next thing I know BAM we got rear ended.  The first thing I did was I turned around and made sure my kids were okay, then I asked my husband if he was okay.  Then we both got out of the car and examined the back of the car and started to exchange insurance information.

I am so grateful the kids are okay and the car is okay.  But after the cops showed up and said we could go, we went straight to the emergency room to get the kids checked out.  We wanted to make sure our kids were okay because even though our daughter was telling me she was okay and didn't hurt, we wanted to make sure.

So, I guess after that whole fiasco we decided to not go to Petapalooza and go next year.  Weather permitting, of course.

I think I'm crazy..

Maybe just a little bit crazy I am.  I think I am the only mother out there who misses their child the moment you don't see them.  Am I weird for missing my daughter after I drop her off?

On the first day of school, it was so hard for me, especially, to say bye to her for a couple of hours.  The second day it was really difficult for either of us to say goodbye.  Now she says goodbye easier than I do.  I still get teary eyed when I sit in the car waiting to leave the parking lot.  Then I come home and I see the toys she left behind before she went to school and I get even more teary eyed.

I think I am too sensitive to her.  But she is my little girl and she will always be my little girl.  I love that girl to no end.  I would do absolutely anything for her.  My son, too, but it's different when it is a girl, I suppose.  But the bond between a mother and her son is pretty intense, too.  However, right now, he is at the stage where he is biting me or hitting me or scratching me.  It's not fun when I am changing his diaper and he's clawing at me to stop wiping him.  And then when I put the diaper on his bum, he scoots up so the diaper falls off.

I know in time this phase will end and he will be my little loving boy.  I honestly can't wait for that moment because I don't know how much more I can handle of him biting my stomach, my shoulder, or any other part of my body.

I am trying to figure out how to make bed time more easier for me at night.  At night, my husband puts our daughter to bed by reading to her and I put our son to bed.  But it's not easy putting him to bed because he's so hyper at night.  Nap time comes easy but bed time takes forever for him to fall asleep.  We even pushed bed time to one hour later to hopefully make it easier on us to put them to bed.

Taco Bell Tuesday

I have a small confession.  I love Taco Bell.  I love their tacos.  But I just recently discovered their yummy, and quite, delicious breakfast burritos and potato bowl.

The best part of their breakfast burrito and potato bowl is that they are only a dollar a piece!  I may be slow in the bandwagon on these new items.  But in my defense.. I have two kids and these two kids take a lot out of me and I don't go out that often by myself.  

Today I dropped my daughter off and then had to stop at Target to get some cleaning stuff for the bathroom.  It is driving me absolutely crazy so I decided now is a perfect time for me to start deep cleaning it.  I also had to get some other stuff as well.  

On my way home, I stopped at Taco Bell and got their yummy breakfast goodies.  Oh my word, I can't get over how delicious they are.

Last night for dinner I made my infamous tuna casserole.  I was going to make chicken with rice and carrots.  But I realized that we don't have anymore chicken.  So I made tuna casserole and texted my husband and told him to pick up some more chicken.  So, today we will have leftover tuna casserole and then the next day I will make chicken with rice and carrots.  We have an over abundance of carrots, so I need to figure out what to do with them.  Thank God for Pinterest.

Monday came too soon

I absolutely love it when the weekend is here.  And I love it even more when it is a great weekend when the kids are happy, there isn't any laundry to do, and I am all caught up on things around the house.

Last weekend was a great one.  This weekend coming up should be good as well.  We are going to go to Petapalooza over the weekend with a couple of our good friends.  It's an event that happens every year.  I love going because I love seeing all these cute dogs there!  It also doesn't hurt getting free swag here and there.

My husband made some pasta sauce over the weekend.  It tasted really good.  He loves making sauce but hasn't had much time lately to make any.  But now he did and it's amazing!

I am getting caught up on some laundry today while my daughter is in school.  I just have a couple to do and a couple to fold and put away as well.  Laundry is never ending over here but I don't mind.

25 April Fools Jokes I Don't Like

In honor of April Fools being tomorrow, I am going to list 25 pranks/jokes that I don't appreciate.  Some are that have been done on me, and some are ones I have seen others do that I don't think are really nice.  Here we go!

1. People who post on social media that they are pregnant.  I think it's rather insensitive to other women out there who are struggling with infertility.  To announce that you are pregnant when you are not makes me mad.  It's like a slap in the face to other women out there who want to have a child so badly.

2. When someone tells you there's a bug on you and they watch you scream hysterically trying to get rid of the bug on you.  Not cool at all.

3. I hate when people point at your shirt and tell you that you have something on there and when you look down they bop you in the face.  

4. When you go to work and your boss tells you that you're fired, and then as you begin to look crestfallen, they say "April Fools!"

5. As a child, I have had many kids tell me that my shoelaces were untied, so when I would look they would laugh and say "April Fools!"

6. When someone tells you that a loved one passed.  I don't understand why people think it is funny to tell someone else that their loved one or anyone passed away.  It's not funny to me.  It is downright mean.


7. When people switch your medication to something else.  I think that's cruel because people need their medication to help with their health.

8. It's also not funny when someone calls their family members to tell them they are in jail and they need bail money to get out.

9. Putting laxatives in one's food is not funny either.  It's just.. I don't know.  As the words of my three year old daughter, "not nice".

10. This is in segway to number 9... but I don't think it's nice to put Saran wrap on the toilet seat and when someone uses the restroom it ends up on them.

11. Placing fake bugs in the house is somewhat funny, but it's not funny when you place it on someone's food and watch them jump up in fear.

12. I think it is absolutely childish when people change the ink pen color out.  I had a blue ink pen and someone once swapped out the blue ink to a red ink; therefore, it messed up what I was working on for work.

13. I have heard people putting Icy-Hot in one's condoms before.  Let me tell you, that is definitely not funny when someone is in pain.

14. Replacing salt with sugar and vice versa is so not funny!  Especially when it is early in the morning and you need your morning java to help wake you up.

15. Replacing one's shaving cream with something else is not even funny.

16. I have heard people taking Viagra and putting it in a man's drink to get some laughs.  I don't think it's funny to see a man sitting uncomfortably as he is trying to adjust his boner.

17. It isn't funny to me when people take the keys from the keyboard off and replace them randomly all over.

18. I don't think it's funny when people do the Mentos and soda trick.  Unless the person is willing to buy me new clothes afterwards, then this trick is stupid.

19. It's not even remotely funny when someone cooks and makes it super spicy when the other person doesn't like spicy food.

20. On any other day I think this joke is funny, but not on April Fools day.. it is when people overstuff your car with balloons.

21. I have had this done on me and it's not funny, especially since I am so OCD with everything.  But it wasn't funny on April Fools Day one day when my fellow co-workers decided to rearrange my stuff on my desk.

22. My husband has done this to me one year and he hid my keys and phone from me.  

23. My friend did this one year to someone, but he replaced water with vinegar once.

24. It isn't very funny when someone puts laxatives in your food and then super gluing the toilet seat so they can't use the toilet.

25. I have asthma, and I don't think it's funny when someone fakes an attack.

Some of these may be funny in theory, but on April 1, it is not funny to do these things.

Cold Spring day

Spring is supposed to be here but it has been pretty cold the past few days.  I don't know if it is my old body or if it really is cold.  Not to mention, yesterday was a bit windy as well as cold.  Wind plus cold equals not fun.

Last night I made chicken teriyaki for dinner.  I attempted to make the teriyaki sauce instead of using the bottle one we had at home.  Let me tell you, it was an epic fail for me.  I guess I will not even try to make it again.  I have absolutely no idea what to make for dinner tonight.

Yesterday was a very productive day for me.  I wish I could say I crafted and made a cute card but then I would be lying and I don't lie.  But yesterday I cleaned under the sink, the sink, the inside of the fridge, and I did two loads of laundry.  I don't know how I found the energy to do all that cleaning but I did it!

Today I am going to do some more laundry and put some clothes away as well.  Time to get started!

All good things come to an end

I am sad to say that Spring Break has ended.  Today my husband went back to work and my daughter went back to school.  It is a sad day for me because I was really enjoying having my husband home all the time and I was also really enjoying having my daughter home with me.  

The past few days my son actually had been sleeping all night in his own crib.  But for some reason, he woke up three times last night!  I feel sad that my husband had to get up each time for him since he has to go to work today.  But he didn't seem to mind.

Last week for Spring Break, we went out to lunch with my mom and did some grocery shopping and then we all had dinner with her and my dad later that day.  The next day we did a road trip to visit my mother and spend a few days with her.  The great news about that visit is that we had our daughter completely in her undies the whole time!  It was a great test to see how well potty trained she is.  And I would say I am fairly confident.  She is now about 99% potty trained.

Over the weekend we had our daughter dye some Easter eggs and we hid them when she went to bed that night.  The next day she went looking for them.  It was a lot of fun.  I can't wait to do this with her every year!

Tonight for dinner will be some sort of chicken with veggies and maybe rice.  

It was a fun week with everyone home, but it's now time to get back to the normal life, I guess.

25 Reasons Why I Don't Like My Job

Today is Thursday, it is also St. Patrick's Day.  I was planning on making stuffed cabbages for dinner.  But I will do it this weekend instead.  Since it is Thursday it is 25 Thursdays.. so I will tell you 25 reasons why I don't like being a stay at home mommy.

In all honesty, there are no reasons to not like being a stay at home mom.  I love it.

I am trying to figure out what to do for dinner tonight though.  I want to make something with the Irish theme since it is St. Patrick's Day.

Weekly Rave: My Kids

This weekly rant or rave will be a huge rave.  I am going to rave about my kids.  I love them all so much!  They mean the world to me.

My first is my little baby Chihuahua.  She is and always will be my first child.  I got her when she was eight and a half months old.  She is now ten years old.  We have been through a lot together.  She was by my side when I had a tragedy happen to me.  She was by my side when my ex decided to end our relationship.  She's been by my side through all the good times and all the bad times in the last nine and a half years.  She sleeps in between my husband and I every single night.  I love how she comforts me when no one else does.  

My second is my little baby girl.  She is the only person that I can think about and I start crying uncontrollably.  I can't explain that power she has over me.  But if you understand me, I mean, really understand me, you will somewhat understand.  Every time I see her, she brings a smile to my face and I love her so much that I just want to protect her from all the bad things that go on in the world.  But I know I can't shelter her forever.

Last and certainly not least, my little baby boy.  He is amazing.  I remember when I was pregnant with him and the ultrasound tech told me it was a boy.  I love this little boy to no end and I am enjoying every single moment that I get to be home with him.

I still can't believe that I have a boy and a girl.  So many families strive to get one of each and some fail miserably.  I know one of our friends has three boys and they're wanting a little girl so badly.  We have another friend who has seven boys and they're done having kids so they never got to have the girl they wanted.  I am so blessed beyond words to have my kids.

Tasty Treat Tuesday: Toffee Bit Chip Cookies


Over the weekend I decided I was going to use these toffee bits that my husband bought me and make some toffee bit chip cookies.  Instead of chocolate chips, I used toffee bits.  Oh my goodness, these cookies are soo devine!  My daughter even loved them.  I gave some to my husband to take with him to work for some of his co-workers as well.

Here is the recipe for the yummy goodness!

Toffee Bit Chip Cookies

1 1/2 cup all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup unsalted butter, at room temperature
1/2 cup firmly packed light brown sugar
6 tbs. granulated sugar
1 large egg
1 tsp. vanilla extract
2 1/4 cups toffee bit chips

Preheat the oven to 350.  Line two baking sheets with parchment paper or spray it with nonstick spray.  In a medium size bowl, sift the flour, baking soda, and salt together.  Set aside.  In another bowl, using an electric mixer at medium speed, beat together the butter, brown sugar, and granulated sugar for about two minutes until it is smooth.  Add the egg and the vanilla extract and mix on low until they are all mixed in.  Gradually add the flour mixture and mix in until incorporated.  Note: Do not keep mixing, do not overmix.  Add the toffee bits and stir together with a wooden spoon.  Again, note, do not overmix, just mix until incorporated.  Chill your dough if it is warm for thirty to forty five minutes.  With a heaping tablespoon of dough, drop the dough onto the prepared baking sheets about six to eight per pan.  Bake the cookies, one sheet at a time until the bottoms and edges of the cookies are lightly browned and the tops feel firm when lightly touched.  If you make small cookies, bake them for about eight to ten minutes, larger cookies bake about ten to thirteen minutes.  Let the cookies cool for about five minutes before transfering them to a wire rack to cool completely.  Makes 15-30 cookies depending on the size.

So much laundry to do, so little time

Over the weekend we went to a friends house.  They made some Russian pilaf that was so delicious!  We also had this really good salad which consisted of tomatoes, avocadoes, and cucumbers.  It was so good, which is ironic because my husband and I don't like tomatoes.  But we couldn't even taste the tomatoes in the salad.  I just might have to duplicate the salad one day, minus the tomatoes, of course.

Yesterday we went shopping for some more clothes for our son.  That was fun to get some clothes for him.  It's been a fun weekend and next week is Spring Break.

I have so much laundry to do!  I feel like it is never ending.  I have a load in the wash right now and a load in the dryer.  I have two more loads to do after that too.  I have a load that I am hoping I can fold today while they nap.  

This time change thing has really been messing me up.  I am so tired.  It could also be because last night it took forever and a year to get my son to fall asleep.  A couple of hours after he finally fell asleep, my daughter woke up.  Thank goodness for coffee.

25 Reasons Why I Love My Job

I absolutely love my job!  I love being a stay at home mommy.  Although the pay is not in monetary value, I do get lots of hugs and kisses.  To me, the hugs and kisses are way better than money.  Here are 25 reasons why I love being a stay at home mom.

1. I was able to witness my son go from crawling to walking.  That feeling you get when you witness, firsthand, your own child complete a milestone is indescribable.

2. I love that I am able to drive my daughter to and from school.  I love watching her go to school, even though it is tough saying goodbye.  But the big smile on her face when she sees me waiting to pick her up melts my heart.

3. I get to wear my pajamas pretty much all the time.  Enough said.

4. I don't have to worry about how my hair looks.  I can just put my hair up in a messy bun and no one judges me.

5. I don't have to deal with waking up early to put makeup on.

6. My bosses, aka my kids, are the best people in the world.

7. I get to form a bond with my children that I probably wouldn't have if I were to work a regular job, and not get to spend as much time with them.

8. My dog doesn't ever have to feel so lonely at home anymore because I'm always home.

9. I don't have to put too much wear and tear on my car since I don't add a lot of miles on my car.

10. I drive an average of only sixteen miles a week, but if I stop at the store I average about twenty miles a week.

11. I can catch up on my shows on the DVR when the kids nap.

12. Being able to see my son complete many milestones that I would have missed if he were to go to daycare.

13. I don't have to worry about my kids getting sick that often.  When my daughter was in daycare, she was sick a lot, but now that she's in school she doesn't get sick as often which is nice.

14. I don't have to have my hours cut because I have to leave early because a kid is sick.

15. I don't have to worry about making my lunch or buying lunch or try to decide where to go.

16. I get to complete a lot of things on my to-do list when the kids nap.

17. On the weekends I can relax and craft if I wanted while my husband watches the kids for me.

18. If I'm sick, I don't have to worry about missing any pay.  The kids understand somewhat that when I don't feel well to give me some slack.

19. I am able to watch my son grow up right in front of my eyes.  He's not a little baby anymore.  He's becoming a little boy.

20. The conversations I have with my daughter are so fun.  

21. I can have dinner ready for my husband when he gets home.

22. I love that I can greet my husband at the door when he comes home from a long day at work and seeing him makes me the happiest girl in the world.

23. Watching my daughter making such strides in school and at home makes me feel like I succeeded as being a good parent.

24. I don't have to deal with any "office drama".

25. My kids.  Enough said.  I love my kids more than anything in the world and they are the reason why I love my job so much!

Wednesday Rave: My daughter

This week I am raving about my beautiful daughter.  For the past few weeks, she has been so incredibly amazingly pleasant.  She is using her words to tell me what she wants rather than yell at me like she used to.  She wakes up pleasant, she used to wake up screaming and/or crying hysterically.  I don't know what happened for her to suddenly morph into a pleasant toddler, but I'm not going tocomplain.

I still can't believe she will be turning four in a couple of months.  Time is flying by.  It feels like yesterday that she was born and now here she is talking, walking, and she is even now going to school.  I hope time slows down for my son so I can enjoy him a bit.

My wonderful laundry pile is still there.  I haven't finished.  I hope to finish it today.  But today I have to meet my husband somewhere at 3:30, so we'll see how things go.

I am off to start folding some laundry before I pick up my baby girl.

Almost Spring Break

In just a few more weeks will be Spring Break for my husband and daughter.  I can not wait!  We are going to have her color some Easter eggs this year.  It will be her first time coloring eggs so we shall see how it turns out.

We are also planning on going to visit my mother for a few days sometime during Spring Break.  That will also be a lot of fun since the kids will get to spend some time with their grandmother and we will be able to get out of town for a few days.

During Spring Break I am hoping that I will get to make some more cards to list as well.  I haven't been able to list and take pictures of the stuff I have made yet.  But I will this week.  I plan on it.  It's just not as easy doing anything anymore with two little kids.  I know once they get a little bit older it will get easier.  Right now I just take things day by day and if I don't get things done, then there will always be another day.

I have three loads of laundry that need to be folded and another two more loads to do.  I hope I can finish folding at least one load while they nap today.  I hope nap time goes easy for both of them and that my son sleeps his entire nap in his crib.

Last night was a rough night putting him to sleep.  We have decided to move bedtime to a hour later so bedtime will be easier for us and so they both sleep all night.  The first night we did this, they both slept all night.  Second night, she woke up in the middle of the night but he slept all night.  The third night, he woke up in the middle of the night and she slept all night.  We have to just keep trying.  Parenting is all about trial and error. 

In a few days will be Daylight Savings Time again and we will have to move our clocks ahead.  I don't know how the kids will do with the time change but we'll see.  I think this weekend we are going to a friends house for lunch and conversation.  It should be fun.

25 Weird State Laws


You know, I never realized how many stupid and ridiculous laws are out there for every state.  I saw a list of them for all fifty states and decided for this Thursdays 25 list, I will post and share some that I thought were a little ridiculous and out there.  If I mention your state, please let me know if this is something you knew or share one that you know!

Here are just 25 that I found interesting.

1. Apparently in the state of Arkansas it is strictly forbidden to mispronounce the name.

2. In California, you can have a frog jumping contest.  But if, for some reason, one of the frogs die, you can not cook it up and eat it.

3. In Colorado, a horse is considered a vehicle; therefore, you can not drink any alcoholic beverages while on said horse.

4. In Georgia, you can not use profane language to a person under the age of 14 or by telephone.  But if they are 15, you can say fuck all you want.

5. In Hawaii, since 2013 car passengers must wear a seat belt.  If they don't, they could result in a $100 fine.  (I think that's an excellent law.)  But if the seats are all full, it is legal to have anyone the age of 12 to hang out in the bed of the truck with no protection. (I don't get this one at all.  There is no safety to this.)

6. In Idaho, cannibalism will give you up to 14 years in prison.  But if you have had to eat your friend or person to survive, then you're okay and won't get punished.

7. In Indiana, it is illegal to catch fish with your bare hands.

8. Apparently in Kansas it is illegal owning any sort of gambling device.  But if it was made prior to 1950, then you're okay.

20. In Texas you are allowed to only take three sips from your beer standing up.  If you plan to chug that bad boy down, then you better sit your toushy down!

21. In Vermont it is illegal to shoot birds for amusement.  So if you plan to go hunting, don't do it for amusement.  Be serious about it.

22. Apparently in Virginia it is a Class 4 misdemeanor to have sex unless you're married.  

23. In Washington you can not destroy another person's beer cask, barrel, keg, or bottle.  It is strictly forbidden.

24. In Wisconsin there is no butter substitutes that may be fed to students, patients, or inmates.

25. In Wyoming it is against the law to take or harm a fish with a gun.

Wednesday Rave: Starbucks Coffee


This week for Wednesday rants or raves, I will be raving about something!  Finally!  After two weeks of ranting about randomosity, I will be raving about an item!  

Today, on this glorious and beautiful day, I decided to go to Target after I dropped my daughter off at school.  I needed to pick up a couple of items.  Sure, I could have picked them up at the grocery store, but I wanted to go to Target.  My main reason?  Starbucks, duh!  I am so in love with their caramel frappachinos with no whipped cream and extra caramel.  I usually get Starbucks when we go on road trips, but today I had to get it.

I didn't get my daily coffee this morning because my creamer ran out and I didn't have any left.  So this whole morning I was going through coffee withdrawl.  But I picked up some creamer and I got some Starbucks while I was at it.

Mr. Fuss Bucket was not happy being in Target though.  I did whatever I could to make him happy but he was still being unhappy.  Now we are home and he's happy.

Last night for dinner I ended up making tuna casserole.  I don't know why I keep making food when we have a bunch of leftovers in the fridge.  Tonight I am using up the chicken that is in the fridge and then eat leftovers for the rest of the week.  I think tonight I am going to make brown sugar chicken.  I'm just not sure if I should make it in the crockpot or in the oven.  I guess it will all depend how things go this afternoon.  But I'm thinking I will cook it in the oven so I don't wake the kids up while I'm in the kitchen.

Haha.  Just a little something funny to share with you on this beautiful Tuesday.

Last night for dinner, I was struggling on deciding what to make.  So I opened the fridge and stared inside for a good ten minutes hoping and praying I could figure something out.  Then voila, I saw some leftover chicken I had made and decided to make some chicken and rice.  I really need to start incorporating more veggies in our meals.

Sometime this week or next week, I need to make two birthday cards for my mother in law and my stepmother in law.  I have not started.  Luckily their birthdays are at the end of the month so I have some time to make them.  I did, however, make and finish the project I am planning to list and sell on my Etsy.  I will post pictures this week sometime.

Tonight for dinner will be more leftovers.  I need to clean out the fridge and get rid of the food that is in there.

Monday Meal: Roasted Parmesan Potatoes

Yesterday for dinner we grilled up some burgers since the weather was so nice.  Along with the burgers I made some roasted parmesan potatoes.  They were so delicious!  All we needed to buy was the parmesan cheese and the potatoes, both which were relatively inexpensive.  We picked up a ten pound bag of Idaho potatoes for $2.99 and the parmesan cheese was only $3.06.  Not too bad since we can make the dish again if we wanted.


Here are the potatoes with their seasonings and right before I sprinkled the parsley on top.  Don't they look absolutely delish?


And here they are in the serving bowl with parsley on top.  Yummy yummy in my tummy!  Here is the recipe for the yummy goodness!

Roasted Parmesan Potatoes

3 lbs. baby potatoes (I used Idaho potatoes and just cut them into coins)
3 tbs. olive oil
1 tbs. Italian seasoning
2 tsp. garlic powder
1 tsp. salt
1/2 tsp. pepper
1/3 cup parmesan
2 tbs. parsley

Preheat oven to 400.  Line a baking sheet with aluminum foil for easy clean up.  Add potatoes in a big bowl and drizzle with the olive oil, Italian seasoning, garlic powder, salt, and pepper.  Toss the potatoes together until everything is evenly coated.  Bake for ten minutes.  Remove from the oven and sprinkle the parmesan cheese on top.  Bake for another 30 more minutes or until potatoes are done.  Garnish the potatoes with potatoes.

Voila!

25 Thursdays: Things That Baffle Me

It is Thursday again.. and that means it is another week of 25 random things!  This week I will be sharing 25 things that baffle me.  

1. With modern technology the way it is, why don't we know who really killed Kennedy?  Surely with the footages that were recorded they could help us figure it out.

2. Why do cars pass me only to go slower?  It makes no sense to me at all.

3. Why can't we figure out what happened to all the planes and boats that mysteriously disappeared in the "Bermuda Triangle"?  I don't believe in the whole conspiracy behind it.

4. Where is Jimmy Hoffa's body?  My theory is he got killed and the killer threw his body in the wood chipper and buried the remains under concrete somewhere.

5. Laundry.. I don't understand how I feel like I am always doing laundry and it seems like the pile never seems to go away.

6. Why am I always so tired when my kids are awake and then once they're asleep and I'm laying in bed, I am left wide awake?  Ugh, that drives me crazy!

7. Have you ever noticed when you're driving in an unfamiliar area and you need to find an address or a house, you turn down the music?  I do it all the time and I don't know why!

8. When you're stuck in traffic, do you ever sit there and look at the cluster of cars and wonder who is the idiot that is in the front that is causing the traffic?  I do all the time!

9. People who ask stupid questions.  I'm sure to them it might be a legitimate question, but really, who are you kidding, it is stupid.

10. Why do women overpack their suitcases when they travel?  I don't understand.  I guess because they want to be prepared for anything.

11. Why my children decide to put up such a fight when it is bed time.  I miss the days when they used to sleep all night and so easily.

12. Why are people constantly glued to their cell phones?  It's like everywhere I go, I see people playing on their phones.  

13. I will never understand why kids and adults bully others.  It truly saddens me when I see or hear about people getting bullied.

14. How can a human being do such horrible things to another child is beyond me.  I will never understand how a man or woman can abuse a child!  They're so defenseless.

15. With that being said, I don't understand how a human being can abuse animals either.  As a dog owner myself, I could never even think to hurt my sweet dog.

16. Sometimes I am so hungry that I could eat in huge quantities, but as soon as I have a plate full of food in front of me, I am left eating like a bird.

17. If water is supposed to be good for you and help you lose weight, how come I'm not super skinny?  I used to drink a lot of water and I never even lost a single pound!

18. Where do our fears of things come from?  I used to have an irrational fear of clowns but I don't know why because I never saw them anywhere.

19. How do some people wake up in the morning and dress themselves?  I look at their poor choice of unmatched clothes and think did you just pick up random things and put it on and think you look good?

20. In school, we are taught all these random things and the teachers all say the same thing, "you'll use it when you're an adult".. blah, blah, blah.  All the things I learned, I have really never used it in my adult life.

21. Why do people disrespect people that are different?  If you think about it, we are all different in one way or another.  Why treat others like they're different?

22. How come when I look at a word it looks like it is spelled wrong?  It drives me crazy because I am left wondering if I spelled it right or wrong.

23. Why do people even bother make appointments for doctors only to get turned down because they are booked and you can't be seen for two weeks?  Like do you plan to get sick two weeks in advance so you can see the doctor?

24. And on that note, why is it that you wait forever to see the doctor in the waiting room and then when you finally see your doctor, he's only in the room with you for like less than two minutes?  And they're so quick to prescribe medicine for you even if you don't really need it!

25. I also really don't understand people who are into being with multiple people at once.  I think it's called polygamy.  I don't understand how people can't just remain faithful to one person.

Anyway, those are some things that I am just totally baffled by.  Some may seem stupid, some may seem decent, but it's what I feel.

Wednesday Rant: Parking lots

Here is another weekly Wednesday rant for you today.  I tried to think of something to rave about since last week I ranted about something, too.  But I couldn't think of anything.  Warning: This entry in my blog may contain some explicit name calling.  If this offends you, please ignore this post.

I don't know about you, but my daughter's school has the worst parking lot ever.  Either that or people just don't know how to drive and give others respect when they're driving.  Case in point, the other day I was leaving her school and this idiot of a driver next to me decides to cut me off!  I am on the left lane getting ready to turn left and he's in the right lane trying to turn left.  Here is this douchebag who thinks it's totally okay to cut everyone else off who is in the left lane and he tries to turn left while he's in the right lane.

Then there are other dumb idiots who leave the school parking lot by driving on a one way road to leave instead of going around a few extra feet to take the right way.  I watch them take the wrong way a lot and think in my head that I hope an oncoming car comes so they're stuck.  But I know I shouldn't think that.

I just seriously don't understand how these people.

Cream Cheese Lemon Blueberry Muffins


Here is the recipe for the yummy cream cheese lemon blueberry muffins.  They are seriously so good that I may make more this weekend.  I forgot where I found this recipe so I can't give credit where credit is due unfortunately.  Anyway, we got invited to a housewarming party this weekend and I think these muffins might be a great treat to bring.  Without further adieu, here is the yummy recipe!


Cream Cheese Lemon Blueberry Muffins

4 oz. cream cheese, room temperature
4 tbs. unsalted butter, room temperature
1 tbs. lemon juice
2 tbs. lemon zest
2 tsp. vanilla extract
2 eggs, room temperature
1/2 cup whole milk
2 cups all-purpose flour
2/3 cups sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 pint fresh blueberries

Lemon Glaze

1/2 cup powdered sugar
2 tbs. fresh lemon juice
1 tbs. lemon zest

Directions

Preheat the oven to 350.  Line muffin tin with cupcake liners.  Beat cream cheese and butter until smooth.  Add lemon juice, lemon zest, and vanilla extract and continue beating until combined.  Add milk and eggs and beat until well blended.  Combine flour, sugar, baking powder, baking soda, and salt in a small bowl.  Gradually add flour mixture to cream cheese mixture until combined.  Fold in the blueberries.  Scoop the batter into the muffin tins until about 3/4 full.  Bake for 30 minutes or until just starting to turn golden brown.  Let cool slightly.

Lemon Glaze

Whisk together powdered sugar, lemon juice, and lemon zest.  Add additional powdered sugar to thicken or additional lemon juice to thin.  Drizzle over the top of the muffins.
