So tired but so worth it...

To say that my life is busy would be a slight understatement.  But thank goodness there is a thing called naps.  Naps are a blessing for me as that is when I can nap myself, catch up with my best friend Jess (www.simplyhollister.blogspot.com), catch up on household stuff that needs to be done like dishes, laundry, cooking, cleaning, etc, give my dog some much needed attention, go online and just relax, and I also love naps cause the house is finally somewhat quiet and I don't hear the noise of my daughter's favorite show on the background.

And on that note, I must go.  My son just woke up from his nap and he needs to be fed and changed.. and in a matter of minutes my daughter will be up from her nap as well.  Gotta love this life.

Brief update on me...

Sorry I have not been blogging as much as I would like to, but here is a brief update on what has been going on in my life.  I gave birth to my son ten days ago on April 19, 2014.  And since he's been here I have had little to no time to really sit and blog and post anything.  But I am sure I will get into a set routine and start doing that again. 

The birth of my son has been a blessing.  My husband and I have been truly blessed with one of each, a son and a daughter.  It is a lot of hard work dealing with a demanding toddler and a newborn, but we make it work.  Unfortunately he goes back to work next week and I'll be home with the two kids by myself until he comes home from work.  I have found several resources on things I can have my toddler do to entertain her.  But the problem sometimes is that she wants to be where I am or she wants to smother her little brother with kisses.  It can get a little overwhelming trying to feed him and have her stand over you and kiss her brother over and over.  I guess I should appreciate that there is no sibling rivalry yet. 

I have been having a little problem lately with my daughter though.  Lately she has been climbing up on the couches in our house.  I know from the couch to the floor is not far and even if she fell nothing catastrophic would happen, but still, as a mother to my little miracle baby (my daughter) I worry and fear constantly that she is going to hurt herself.  But before she was able to climb on the couch if one of us were sitting there and she'd grab onto our pant leg and climb up.  But just recently we discovered her being able to climb on her own without us sitting.  We put boxes on the couches to see if that would prevent her from climbing but it didn't last long.  She still sometimes climbs up but not as badly as before.  Anyone have tips on what to do?  My floor in the living room is tile and I have put carpets and a foam mat by the floor near the couch to "cushion" her fall, but it is not very reassuring still.

Fridays can be the best...

Last night I did not cook dinner because my husband offered to grill up some hamburgers for dinner to give me a break from cooking.  So, I don't have a picture of last night's meal to share.  Sorry about that. 

Back when my husband and I discovered I was pregnant with our daughter, he made a deal with me.  He told me that as long as I don't wake him up in the middle of the night to go get me a craving of a food/drink that I have, he will take me out to dinner every Friday night to a restaurant of my choice.  He was true to his word and I got to enjoy one day of not cooking and not wondering what to make for dinner that night.

Now that we are pregnant with our son, he made the same deal with me.  But trying to go out to a restaurant with a toddler and actually enjoy ourselves was proving to be difficult.  So, we kind of agreed that instead of going out to dinner, he would pick up either fast food of my choice or he'd pick up something at a grocery store. 

I have been having a strong craving for fish with this pregnancy lately.  But unfortunately, my husband is not liking the idea of me eating any sort of fish during my pregnancy.  I know that it's okay to eat in moderation, but he is just being concerned and wants to make sure the baby is okay.  I told my husband a couple of weeks ago that since I was near the end of my pregnancy, I was wondering if he could take me out to dinner so I can get salmon.  So instead, he did the next best thing.  He bought salmon burgers.  That is what we are having for dinner tonight.  I can't wait!

It sure isn't easy...

I am going to make a better attempt on updating my blog more often.  But it sure is not easy when I have a toddler at home that I take care of while my husband is at work.  And on top of taking care of her, I am also busy doing the household cleaning and laundry that needs to be done.  Sometimes I think my life was a little easier when I was actually working.  But if I was still working, I know I would not have time to blog. 

Last night I made this stir fry dish that my husband loved so much.  He loved it so much that I had made it two nights in a row.  The dish I made last night was just a little different than the night before because this time I added carrots.  He also commented that this time the chicken tasted more tastier.

Here is what we had for dinner last night.

I don't know what to call it because it was just something that I made up out of thin air.  But it has chicken, broccoli, carrots, onions, and rice.  I think I will call this recipe Chicken, Broccoli, and Carrot Stir Fry.  I don't have exact measurements because I eyeball'ed everything in this dish.  But I will post what I think it was.

Chicken, Broccoli, and Carrot Stir Fry

1/2 lb. chicken breast, cut in cubes
1 (12 oz.) bag of frozen broccoli, thawed
1 (12 oz.) bag of frozen carrots, thawed
1 medium onion, diced
2 c rice, cooked
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
1 tsp. teriyaki sauce
unsalted butter

Cook onions in about two tablespoons of unsalted butter.  Once onions are soft but not too soft, add the chicken.  While chicken and onions are cooking, cook rice in a separate pot or in a rice cooker.  Steam the broccoli and carrots while everything is cooking.  Add a little bit of salt and pepper to the chicken and onions.  Once the chicken is thoroughly cooked, put the chicken and onions in a big bowl.  Add the broccoli and carrots once they are fully steamed.  Add a bit more of salt and pepper to the bowl and stir to combine.  Finally, add the rice when it's completely cooked.  Add a tablespoon or two of butter, and add a little more salt and pepper to taste, and stir everything to combine.  After everything is combined, pour some teriyaki sauce over everything.  Enjoy!

My first blog post...

Well, this is my first attempt in doing a blog.  I am a small town girl who moved to the big city that never sleeps, Las Vegas, four years ago to be with my boyfriend.  That boyfriend turned into my husband and we have now been married for almost three years, have a wonderful daughter who is almost 21 months old, we also have a fur-baby Chihuahua who is eight years old who I brought with me when I moved to the big city.  My husband has adapted her into his lifestyle and loves her as much as I do.  And we have another baby on the way, a boy this time, that will make his debut in two months.  We are beyond thrilled as our little family we have always wanted is going to be complete soon.  The only thing we have missing in our life is the white picket fence.

I love cooking meals for my husband.  I got really lucky in the department that my husband is not a picky eater like most people I know.  However, the two things my husband refuses to eat are also the two things I don't eat myself or will ever cook with... and that is ketchup and tomatoes.  We both have a strong dislike for those two things.  But other than that, I usually cook meals for him that I find on the internet or Pintrest and as we eat our meal, we both critique it and I make mental notes to myself on what I can do next time to make it fit to our palate.  I am not much of a baker, but I do love to bake cookies, cupcakes, and other baked goods that I can find the recipe for.

I wish I could be like some people who can find things in their pantry or refrigerator and throw a fantastic meal together, but unfortunately, I am not a culinary genius.  I just find recipes I like to try and make it then I tweak it later when I want to make it again.  But I will post the recipe and try to give credit due to the person who I got the recipe from when I post recipes but I will admit that I can't remember who I got them all from, so I apologize if I didn't ask for permission to use your recipe.  But at the end of the blog, I will tell you what my thoughts were and what my husband and I have decided to do to tweak it next time to fit our palate.  It might suit your tastebuds, but then again, it might not and you might like the recipe as is.  But I will do what I can to tell you what I thought.

I also love to craft.  I love making homemade cards, handmade necklaces and bracelets, and little projects here and there that I have been wanting to do but I just haven't yet.  Unfortunately, I put my crafting supplies in storage for now as we are expecting a second child and I wanted to devote most of my attention and focus on my family before I start taking up crafting again.  Right now it is near impossible to find time to make a quick card to show you guys while taking care of my daughter and doing the everyday household things that I do on a daily basis.  But I am hoping once my son is about three or four, I will be able to find the time to craft.  Until then, my creative juices will be on hold for now.

Well, that's about it for now.  I will attempt my best to update this on a regular basis with pictures of what I have made for dinner the night before and the recipe as well.  I look forward to hearing your feedback.  I will also post things on my daughter and fur-baby and my soon-to-be son who will be here in less than two months.
