Fridays can be the best...

Last night I did not cook dinner because my husband offered to grill up some hamburgers for dinner to give me a break from cooking.  So, I don't have a picture of last night's meal to share.  Sorry about that. 

Back when my husband and I discovered I was pregnant with our daughter, he made a deal with me.  He told me that as long as I don't wake him up in the middle of the night to go get me a craving of a food/drink that I have, he will take me out to dinner every Friday night to a restaurant of my choice.  He was true to his word and I got to enjoy one day of not cooking and not wondering what to make for dinner that night.

Now that we are pregnant with our son, he made the same deal with me.  But trying to go out to a restaurant with a toddler and actually enjoy ourselves was proving to be difficult.  So, we kind of agreed that instead of going out to dinner, he would pick up either fast food of my choice or he'd pick up something at a grocery store. 

I have been having a strong craving for fish with this pregnancy lately.  But unfortunately, my husband is not liking the idea of me eating any sort of fish during my pregnancy.  I know that it's okay to eat in moderation, but he is just being concerned and wants to make sure the baby is okay.  I told my husband a couple of weeks ago that since I was near the end of my pregnancy, I was wondering if he could take me out to dinner so I can get salmon.  So instead, he did the next best thing.  He bought salmon burgers.  That is what we are having for dinner tonight.  I can't wait!

It sure isn't easy...

I am going to make a better attempt on updating my blog more often.  But it sure is not easy when I have a toddler at home that I take care of while my husband is at work.  And on top of taking care of her, I am also busy doing the household cleaning and laundry that needs to be done.  Sometimes I think my life was a little easier when I was actually working.  But if I was still working, I know I would not have time to blog. 

Last night I made this stir fry dish that my husband loved so much.  He loved it so much that I had made it two nights in a row.  The dish I made last night was just a little different than the night before because this time I added carrots.  He also commented that this time the chicken tasted more tastier.

Here is what we had for dinner last night.

I don't know what to call it because it was just something that I made up out of thin air.  But it has chicken, broccoli, carrots, onions, and rice.  I think I will call this recipe Chicken, Broccoli, and Carrot Stir Fry.  I don't have exact measurements because I eyeball'ed everything in this dish.  But I will post what I think it was.

Chicken, Broccoli, and Carrot Stir Fry

1/2 lb. chicken breast, cut in cubes
1 (12 oz.) bag of frozen broccoli, thawed
1 (12 oz.) bag of frozen carrots, thawed
1 medium onion, diced
2 c rice, cooked
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
1 tsp. teriyaki sauce
unsalted butter

Cook onions in about two tablespoons of unsalted butter.  Once onions are soft but not too soft, add the chicken.  While chicken and onions are cooking, cook rice in a separate pot or in a rice cooker.  Steam the broccoli and carrots while everything is cooking.  Add a little bit of salt and pepper to the chicken and onions.  Once the chicken is thoroughly cooked, put the chicken and onions in a big bowl.  Add the broccoli and carrots once they are fully steamed.  Add a bit more of salt and pepper to the bowl and stir to combine.  Finally, add the rice when it's completely cooked.  Add a tablespoon or two of butter, and add a little more salt and pepper to taste, and stir everything to combine.  After everything is combined, pour some teriyaki sauce over everything.  Enjoy!
