Corny Chicken Bake
I think it is safe to say that my husband and I love to eat chicken and turkey. We rarely eat pork or red meat so we opt for chicken and turkey. It's healthier for you and won't clog your arteries like red meat and pork will do to you eventually. Last night for dinner I made Corny Chicken Bake. My husband and I love this dish because it is so simple and tastes amazing. Amazing isn't even the right word for it. It is just seriously so good! The best part of this dish is that we have everything in our house to make it! Here's the recipe.
Corny Chicken Bake
3 cups crushed corn bread stuffing
1 (14 3/4 oz.) can cream-style corn
1/3 cup finely chopped onion
1 celery rib, chopped
4 boneless skinless chicken breast halves (4 oz. each)
1/4 cup packed brown sugar
1/4 cup butter, melted
3 tbs. spicy brown mustard
In a large bowl, combine the stuffing, corn, onion, and celery. Spoon into a greased 11x7 baking dish. Top with chicken. In a small bowl, combine the brown sugar, butter, and mustard; spoon over chicken. Bake, uncovered, at 400 for 25-30 minutes or until a meat thermometer reads 170.
