Super Supper
I know, I know, with a name like Super Supper you have to wonder if it's really all that "super", right? Well, I can vouch for the name of the recipe that it is indeed super! My husband and I both love this dish. But I will be honest and say that, the dish is great but cooking it is a pain in my butt! It takes a lot of pots and pans to make the meal and it just creates a big huge cluster of a clutter in my kitchen on the counters and in the sink. It was so good that we are having that for dinner tonight. With that being said, here is the recipe for this Super Supper.
Super Supper
1 lb. ground beef
1 small onion, chopped
3/4 cup water
1 (6 oz.) can tomato paste
1 tsp. salt
1/2 tsp. garlic powder
1 (8 oz.) pkg. cream cheese, cubed
3/4 cup 2% milk
1/2 cup grated Parmesan cheese
7 cups cooked egg wide noodles
In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the water, tomato paste, salt, and garlic powder. Bring to a boil. Reduce heat; cover and simmer for 5-7 minutes or until heated through. In a small saucepan, melt cream cheese over low heat, stirring constantly. Gradually stir in milk and Parmesan cheese until blended. Place noodles in a greased 13x9 baking dish. Spread meat sauce over noodles. Spoon cream cheese mixture evenly over the top. Bake the casserole, uncovered, at 350 for 30-35 minutes or until heated through.
Note to self: I need to figure out an easy way to make this dish without making such a huge clutter of pots and pans in my kitchen.
